Meaning
Ever since a certain point in time or since an event happened, a state has continued unchanged until now.
Note
Indicates a state that started at a specific point in the relatively distant past and has continued without change until the present. It is not used for the immediate past or for future events. Compared to the more neutral '〜てから', '〜以来' emphasizes the unbreaking continuation of the state.

卒業して以来、彼に会っていない。
I haven't seen him ever since we graduated.
日本へ来て以来、毎日お米を食べている。
